SNOW GOOSE BEER BRATS

While you cleaning your geese after a long season's spring snow goose hunts there is always some breast meat that gets a little to much shot to be used as slab meat. So try the recipe out for size this one is ideal for those summer cook out and kid will love um even those that dislike wild game table fair won't be able to eat enough of them.

    Start with:
  • 7lbs snow goose meat
  • 3lbs pork
  • 4T salt
  • 1T sugar
  • 2T dry mustard
  • 1T ground sage
  • 1T ground coriander
  • 1Tpaprika
  • 1T black pepper
  • 1T ground rosemary
  • 2t cayenne pepper
  • 2t nutmeg
  • hog casings
  • 2 cups BEER any will do I like dark beer

Add all of your spices to the beer and mix then refrigerate. Cut all meat in to pieces that will fit in the grinder then mix with spiced beer then grind with fine plate. Once you're done with grinding mix your seasoned ground snow goose and pork with all of the seasoned beer that is remaining, this will leave you with a watery meat mixture. Using either a hand stuffer or most meat grinders have attachments for stuffing, stuff meat mix in to medium sized hog casings make them about 5" long and twist. Refrigerate and freeze any not used in a few days. If you like it a little spicier just kick up the cayenne and the paprika a little. Not dogs but Darn good.
